Grilled Scallops with Red Pepper Sauce
Cooking Paleo meals is fun and creative. Put your own spin on these recipes and don't be surprised if your friends and family ask for more.
Paleo ingredients include:
Meat, fish, eggs, vegetables, fruit, nuts, healthy oils (like olive and coconut) and spices.
A few things to keep in mind...
Try to use mostly Paleo ingredients, but feel free to use a little dairy (like butter) if that makes cooking (and eating) more enjoyable for you. Just make sure it's REAL butter, not the fake stuff. There is no place for margarine in your Paleo kitchen.
Using a splash of wine in sauces is a great way to de-glaze pans. Chicken broth works well too.
It's best to cook with fresh ingredients, but that's not always possible. For tomato sauces, I frequently use Pomi tomatoes. It's one of my favorite products, despite not coming from the produce section. I also use full-fat canned coconut milk because it's convenient.
If your dish needs more zing, try using lemon, lime, or apple cider vinegar. Sometimes a little acid will bring a dish to life.
Salt is best used to bring out the natural flavor of your ingredients, rather than to make dishes taste salty. I've heard chefs say that learning to properly season (aka salt) food is the key to good cooking.
Cooking is creative, so have fun in the kitchen.
Most importantly, eat with gusto, knowing you are eating the healthiest, most natural diet possible.
