Behold: The Triangle Omelet
I love omelets. I usually put vegetables right on top, but you can put them inside the omelet, or mix them right into the eggs before cooking. It's tough to go wrong with an omelet. The worst thing that can happen is that you end up with scrambled eggs. Not such a bad thing! The omelet in the photo above ended up shaped like a triangle; I had a little trouble folding it (it's all in the wrist, so they say). I topped it with some greens and added a couple grape tomatoes just to be fancy. It looks pretty, doesn't it?
When you eat Paleo for breakfast you can get creative or just keep it simple. The most important thing is that you eat real foods that taste good.
And, of course, omelets go great with everyone's favorite: bacon!
This is a great breakfast if you want something a little sweet. It makes a good dessert too, and doesn't cause sugar cravings later. Go to Berries and Cream to get the details.
Hands down, my favorite breakfast. This keeps me going for hours and makes me feel like I'm doing something really great for my health (actually, most Paleo foods make me feel that way). The key is to cook the salmon ahead of time and keep it in the refrigerator, ready to go.
