Totally Awesome Chocolate Balls

Even the most dedicated Paleo eaters want something sweet once in awhile, especially if it happens to be chocolate.

I think it's safe to say these chocolate balls are totally awesome. Whip up a batch and let me know what you think.

Awesome and Addictive

Ingredients:

  • 1 cup pecans (plus 1/2 cup, separate)
  • 1 cup pitted dates
  • 1/2 cup almond butter
  • 2 tablespoons organic cocoa powder
  • Pinch of salt

How to:

  • Start by placing 1/2 cup pecans in a food processor and pulse until finely chopped. Put in a bowl and set aside
  • Place remaining pecans, pitted dates, almond butter, cocoa powder and salt in the food processor and mix until the consistency of dough. If necessary, add a little more almond butter
  • Shape the dough into balls (1 inch in diameter) and roll in chopped pecans
  • Refrigerate (they freeze well too)
  • Makes one dozen

A note about organic cocoa powder:

I use Green & Black's Organic Cocoa Powder. Here's what it says on the back of the container:

"Our organic cocoa is made with the finest organic cocoa beans, grown in the shade of rainforest trees. We buy our Fair Trade Certified cocoa direct from the farmers, paying them a higher price than they would receive for conventional cocoa."

Sounds like another good reason to eat chocolate.
