Almond Fig Bites

Sometimes, even the most dedicated Paleo eaters just want something sweet. If you’ve got the urge for a sweet treat, you can do one of three things:

1. Deny yourself and hope it passes

2. Really splurge and eat a cupcake / box of cookies

3. Have a couple Paleo treats made with naturally sweet ingredients

If you’ve decided to go with option 3, try Almond Fig Bites. They’re my new favorite sweet treat. Have them with a cup of coffee or tea and you won’t feel deprived at all.

Almond Fig Bites

Ingredients:

  • 2 cups raw almonds
  • 2 cups figs (hard stems trimmed off)
  • 1 orange (juice and a slice of rind)
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut oil

How to:

Pre-heat your oven to 350 degrees.

Grease a cookie sheet with the coconut oil.

Put the raw almonds in a food processor and grind well.

Add the figs, orange juice, slice of orange rind, and vanilla extract.

Grind until you can shape the mixture into small balls.

Place the balls on the cookie sheet and press with the bottom of a glass to flatten slightly.

Bake for approximately 10 minutes, until bottoms are slightly browned.
